 This laser thermometer by BonJour measures surface temperatures using infrared technology.  It provides nearly instant read out and can measure temperatures up to 932 degrees fahrenheit.

 I found this device to be both accurate and easy to use.  Since you can operate it with one hand, it's a great tool for while you're working at the stove.  Proper surface temperatures are crucial when it comes to keeping food from sticking to a pan, as well as determining when a pan is ready to have food added to it.

 I think that if I had to go back, I would get the BonJour model which includes a probe so that I could use one tool for checking surface and internal temperature.  That said, this model does its prescribed job very well.
