I love one pot meals, especially if they require long slow cooking. And the best pots for this are Le Creuset's French Ovens. These are made to last for generations. Though expensive, you can find these ovens ranging in price from $79.00 to over $300.00, depending on size. Le Creuset offers a life time warranty on their cookware. They are hand forged and have all in one piece handles. The lids are heavy and tight fitting, forming the perfect seal needed for slow oven cooking. They are lined in either cast iron or enamel over cast iron. The outer coating is a highly durable enamel in brilliant colors.

These are heavy pieces, and rightly so. They go from freezer to stovetop, or oven, right to the table. They clean very easily. Like most of Le Creuset's line of cookware, they perform best on medium heat.  The French ovens perform miracles with tougher cuts of meats. It's so easy with these French ovens to look like a kitchen magician.

I love taking tough pot roasts, short ribs, lamb shanks or stew meats and turning them into succulent tender dishes. It's so simple. I start with my stove by sauteeing a finely chopped mix of vegetables: onions, garlic, celery and carrots. Once they are tender, I toss in the meat and thoroughly brown it. I add some good beef or vegetable broth to cover, add some peeled potatoes, put the lid on and place in a 275 oven for 4-6 hours. Delicious! A crock pot just can't compete with the complex and rich flavors produced by these pots.
