A woman in my area wrote the "Busy People's Low-fat Cookbook" to earn money to help pay medical expenses for her husband that was battling brain cancer. Her name is Dawn Hall and she has compiled a great selection of low-fat recipes that are quick and easy to prepare. The book is spiral-bound with a washable cover. Dawn Hall now has a total of nine cookbooks that can be found on her website www.dawnhallcookbooks.com I love the simple recipes in this book that use only 7 ingredients or less in each recipe. Most of the ingredients you will probably already have in your kitchen. I really don't like to cook, so the less complicated and quick a recipe is the better I like it.
The recipes are very good and I don't really feel like I'm eating low-fat food. You can find a recipe from main dishes, appetizers, breads, soups, salads and even desserts. In addition to the recipes she gives you a sample list of the items she likes to stock in her kitchen for healthy non-fat cooking.
Dawn Hall is a recovered, admitted compulsive over eater and food addict, so she has experience with learning to cook and eat low-fat foods. I would recommend adding this to your cookbook collection.

I really like to find cookbooks that have simple recipes - if there are more than 10 ingredients, it's a bit much for me to tackle!
