I have a complete set of Zwilling J.A. Henckels Professional "S" knives and love every single one, but the 7" Santoku knife is my favorite. I am from an Itialian cooking family and my fiance is a firefighter(aka chef) we cook all the time! I like the santoku knife the best because you can easily slice vegetables very thin and it does not stick to the knife. It is made of 18/10 stainless steel and is made in Germany. This knife should not be used for cutting any meat product but when it comes to cutting a tomato slice - wow you will be impressed. Slicing, dicing and mincing is its specialty! It is a heavy knife but relative to its size; it has a nice curve to the blade so that you can cut and glide the knife quicky and easlity; the knife makes it so easy that you feel like you are a real professional chef! But be careful; this knife can cut your finger OFF! The edge of the blade near the handle is rather sharp and pointy (I have grabbed it and cut myself).

After owning it for over five years, it still looks and works great. It has proven to be durable and dependable as the rest of the set of knives. Do not use in the dishwasher.

The Professional "S" series can be pricey, but, "you get what you pay for" and in my opinion, "J.A. Henckels Professional "S" knives are worth every penny!"
