I love to cook and eat as healthy as I can, so I make alot of my meals homemade from scratch and freeze. Here is a recipe for banana applesauce bread.
If you have bananas that are getting mushy and brown, instead of throwing them out why not use them to make some banana bread, you can also freeze them to use when you have the time to make the bread.
First preheat you oven to 350F or 177C, and grease up a 9 x 5 inch loaf pan (you can also use a muffin pan to make these into muffins instead, or a cake pan) set pan aside.
1cup all purpose flour
1cup whole wheat flour
1/2cup brown sugar
1Tbsp baking powder
1/4tsp baking soda
4 egg whites (beat until fluffy)
1cup mashed bananas
1/2cup skim milk
1/2cup unsweetened applesauce(jar or homemade)
1/2cup chopped walnuts(optional)
In a large bowl combine dry ingredients.
In a medium size bowl beat egg whites until they are fluffy
In the medium sized bowl, after beating the eggs, add the bananas, milk, applesauce and vanilla. Mix all together.
Add the wet ingredients to the dry ingredients in the large bowl and mix really well until all ingredients are blended together.
After all are blended together, if you are using any kind of nuts add them to the mix, also add the raisins. Mix it all up.
Pour ingredients into your loaf pan or muffin pan.
Bake for 55 minutes, lightly inserting a tooth pick to check for readiness.
Let cool and then lightly turn pan upside down to remove your bread or muffins. To make things easier you can use wax paper and just lift the paper out of the pan, to do this leave enough paper hanging over the edge of the loaf pan.
I love to add a little butter while still hot so it melts in, so good!!
