Trader Darwin's Southwestern Stuffed Chicken

My husband and I are big fans of almost anything Trader Joe's does, so when someone gave us a package of their Southwestern Style Stuffed Chicken Breast under the Trader Darwin's name, I was anxious to try it. Although it was something I might not have picked out myself, I'm really glad I had the opportunity to see what it was like.

The package comes with three large chicken breasts that are coated in a zesty, crispy coating and covered with olives, shredded cheddar cheese and just the right amount of enchilada sauce. Inside each breast, an Ortega chili floats in melty cream cheese.

Chicken is not usually my first choice in meat because I find it boring, but Trader Darwin's Southwestern Style Stuffed Chicken Breast was so good, I forgot I was eating chicken. The meat is juicy and flavorful, which gives them bonus points right there, and the cheese filling was rich and creamy, contrasting well with the crispy coating and giving the whole thing a very pleasant taste and texture.

These chicken breasts are just zesty enough to have some kick without being truly spicy. For those who don't like Ortega chilis, the one in this product is in one large piece so you can easily pull it out--although some of the flavor will still be there.

Since there are only two of us in our house and three breasts in the package, I reheated the third one in the microwave the next day for lunch. Although the topping was no longer crunchy, which is to be expected, it still had good texture and flavor.

Despite all the cheese and breading, this is a surprisingly healthy entree. It contains only 8 grams of fat, 190 calories and 6 grams of carbohydrates per serving, yet it offers 23 grams of protein. Paired with some black beans and a salad, this would make a very good and satisfying meal for most diets. The down side is that it is packed with sodium at 700 milligrams, or 29% of your daily intake. If you are watching your sodium, be sure to keep other meals that day very low in that regard.

I will definitely look for Trader Darwin's Southwestern Style Stuffed Chicken Breast the next time I shop at Trader Joe's, because I thoroughly enjoyed it.
