I'm a great celebrity chef fan and amateur cook, so when I saw that Heston Blemunthal's favourite knives were these Japanese Tojiro Senkou knives, I had to buy one to see for myself. Not only did I end up buying one but four and I am so balled over by these knives that they are on my wishlist for brithdays, Christmases and any other present giving occasion until I have the full set.

The blades are extremlely sharp made from Micarata and 18/10 stainless steel, but not only are fit for purpose but they are enhances by beautiful damascene blades. Tojiro Senkou Tojiro Senkou knives have up to 62 layers of steel in them which produces a cushioning or damping effect to the knife making it extremely sharp and powerful. These layers are made by folding a number of leaves of steel with different properties around a core of VG-10 steel. The outer layers of the blade are made from stainless steel which is extremely resistant to rusting, staining or pitting (however you should still always wash and dry your knives after each use). Not fit for the dishwasher.

Whilst normally, the latter sentence would put me off buying any kitchen utensil, the fact that these knives are a dream to cut with whether you are slicing a tomato or onion, makes the expense and washing up all worth it.
