My mom received this book as a gift. At the time she got it, I remember she was baking a lot and experimenting with selling her cakes. This was like her bible and was quite helpful and inspirational to her. I've looked through it many times while she was baking, in anticipation of what would come out of the oven. I was always impressed with the photos, all taken by James McNair, himself.
There is a basics section to familiarize yourself with cake making techniques (Pages 7-20).
There are lots of recipes (Pages 21-103). My favorite recipe is for the Red Velvet Cake. My mom made it for me on Valentine's Day, in a heart-shaped pan. It was so yummy, super red and ultra-moist. The cream cheese frosting was to die for!
I've also had the pound cake which is fabulous (Page 23). I would love to try McNair's White Cake (Page 28). It has pistachios and vanilla-flavored buttercream on it.
Finishing touches like sauces, frosting and icing, etc., are in the section, Finishes (Pages 103-127).
