What a great little cook book for the busy moms of today. We all know that many mothers have to work outside of the home for extra income, and that makes for a very busy life. It can be so stressful to come home from a tiring day at work with the prospect of more work time in the kitchen in order to provide a nourishing meal for the family. This is exactly what the authors of this handy cook book understand and help avoid with these recipes that are both nutritious and easy to prepare quickly. And not only nutritious, but, mindful of the pickiness of little kids, they are recipes that kids will like. Also, many of the recipes are geared toward having the kids help prepare the meal. All the authors are registered dietitians, but also mommies.
The book has been organized to be quick and easy to use. There are ideas for organizing your grocery shopping and your kitchen so that everything is simple and speedy while keeping health at the forefront.
Some recipe names are as follows: Homemade Chicken Nuggets; Chicken and Vegetable Pasta; Chicken and Rice A Roni; Beefy Turnovers; Taco Pie; Cinnamon Carrots; Oven Fried Vegetables; Fruited Rice; Fast Fried Rice; Gumdrop Bread. Of course there are many, many more – almost 150!
I found that my little grandson liked most of the recipes and he is PICKY. His favorite snack recipe is Frozen Yogurt Sandwiches. Just take frozen yogurt and squish between two graham crackers for a quick and easy (and healthy!) snack. You can eat them right away or freeze some for later.
