Betty Crocker's Vegetarian Cooking is a great book to have if you or a family member is a vegetarian. Although Betty Crocker's Vegetarian Cooking was published in 1997, the recipes throughout the book are as good now as they were ten years ago.
Betty Crocker's Vegetarian Cooking has several sections that feature different types of vegetarian cuisine--there is an entire section devoted to soups, stews, and chilis, one section with pizza and sandwiches, and several more sections featuring salads, skillet meals, and side dishes.
The recipes that are included in the book are delicious, and simple to prepare. Since I am not the world's best cook, I can attest to the fact that the recipes are not too complicated to make. The only real issue that I have with this cookbook is that there are not a lot of vegan dishes. However, if you eat dairy, then Betty Crocker's Vegetarian Cooking is definitely for you. The book also gives pointers on vegetarian nutrition, dispells vegetarian myths, and gives advice on what every vegetarian should have in the pantry.
Overall, I would say that Betty Crocker's Vegetarian Cooking is a must have if you are a lacto-ovo vegetarian, but not if you are a vegan. Vegetarians will love the countless delicious recipes, and even meat eaters will enjoy these dishes too!
